Ranch-y Chicken and Avocado BLT Wrap
/Why is it that food often tastes better eaten out of hand than when there’s a fork involved? I know that’s not a universal truth, but if we were to take a poll, I think we would find that burgers, hot dogs, burritos, tacos, sliders and subs most often fall onto our lists of comfort/fun foods, so maybe there’s something to this. And if you’re partial to hand-held meals, I think you’re going to like this.
The idea for this one came from a conversation with my daughter who had seen a recipe for a BLT wrap that grabbed her attention, but upon closer inspection, just wasn’t all that exciting…bacon, yes, tomato, chopped, lettuce, chopped, a little mayo. Done. Rather uninspired. Well, if you ask me, anything called a BLT wrap should be way more than just exciting, it should knock your socks off! So we decided that I should get to work creating a BLT wrap that would do just that.
Of course any BLT wrap seeking to avoid accusations of fraud would by definition need to include bacon, lettuce and tomato. But in the interests of knocking your socks off, it seemed that avocado would also be required. And how about slices of tender, roast chicken to ramp up the protein quotient and some feta cheese for a salty/creamy hit, and then, just for fun, we'll slather it all with ranch dressing.
Oh yeah. Now just hit the whole thing with a few grinds of fresh cracked pepper, roll it all up in a soft tortilla (or the wrap of your choice) and hang on to your socks.
This, my friends, is what I’m talking about when I say a BLT Wrap. Here’s the recipe…
Ranch-y Chicken and Avocado BLT Wrap

For Each Wrap:
4 oz cooked chicken breast, sliced
3 or 4 slices of avocado
1 or 2 slices of crisp bacon, chopped or crumbled
3 or 4 thin slices of tomato
a good handful of mixed salad greens
a good drizzle of ranch dressing
crumbled feta or blue cheese
a good grinding of black pepper
1 wrap or flour tortilla
Briefly heat the wrap or tortilla to make it more soft and pliable. Sprinkle the lettuce leaves over the surface of the wrap and top that with the sliced tomatoes, the chicken, the avocado and bacon. Drizzle with the ranch dressing and sprinkle with the feta cheese or blue cheese. Top this with a good grinding of black pepper.
Starting with one end, tightly roll the wrap, pushing the ingredients towards the middle as you go so they won't fall out the end. Cut the wrap in half at a diagonal and enjoy!
